Keto Rye-Style Breakfast Rolls.

For a continental-style breakfast.

I grew up in a household where a continental breakfast was what we had most mornings, especially before school, but even more so on the weekends. Fresh rolls from the bakery were a Saturday morning treat. And sometimes, when I am homesick, I miss those the most. Keto isn’t exactly heavy on the bread side, but these flax and mozzarella rolls are a perfect substitute for coarse rye bread rolls; but if you prefer more of a wheat-style roll, simply swap the flax for ground almonds.

Ingredients (makes two traditional rolls):

1 cup grated mozzarella

0.7g cream cheese

1/2 cup flax meal

1 heaped tbsp almond flour

1 tsp baking powder

1 large egg (beaten)

1 Preheat the oven to 180°C and line a baking sheet with parchment paper.

2 In one bowl mix flax meal, almond flour, baking powder, and any seasoning you like (sometimes I add a little Green Goddess seasoning to give my rolls a herby twist, but a simple pinch of salt will do as well). In another bowl beat the egg.

3 In a microwavable bowl mix the mozzarella and cream cheese. Microwave for 1.5 minutes, then stir together. Microwave for another 30 to 60 seconds until the cheeses form a smooth dough.

4 Add the flour mix and 2/3s of the beaten egg to the cheese dough and mix well. I use a baking spatula and then my hands, but you can also use a stand mixer with a paddle attachment if you have. If you use your hands be careful, the cheese is very hot!

5 Divide the dough into two equal portions and roll between your hands until you have two smooth patties. If you like you can use a warmed knife to cut a cross into the top, but it’s not necessary. Brush the remaining beaten egg on top of the rolls as egg wash.

6 Bake on the top shelf for 12 minutes, until golden brown. Allow to cool and set for about 10 minutes afterwards, the rolls will firm up.

Now slice in half and top with your favourite continental (sugar-free!) toppings, and enjoy. I hope you have a peaceful and relaxing morning.
